Restaurant General Manager: Restaurant General Managers are responsible for overseeing the overall operation of their respective venues while contributing to the unsurpassed guest service CityWalk is known for. They ensure their venues run efficiently by providing exceptional leadership, developing their Team Members (both hourly and salaried), and effectively managing the business to ensure positive performance to budget and standards.

Essential Duties Include:

  • Maintain aggressive efforts to achieve or exceed budgeted sales and profit goals.

  • Management of food, beverage and labor costs through proper and hands on monitoring of all policies and procedures.

  • Ensure the highest quality food, beverage, service, sanitation, safety and retail standards are maintained.

  • Remain in strict accordance with all State of Florida Beverage laws by ensuring the responsible vendor program is administered.

  • Strictly enforce all cash handling procedures, purchasing and receiving procedures and accounting policies.

  • Assist in recruitment, training, developing, coaching, and evaluating employees and Managers in all aspects of business.

  • Five to seven years high volume, full service restaurant management experience required.

  • Experience overseeing multiple units/venues preferred.

  • Florida Food Manager Certificates required

  • Knowledge of financial and labor costs a must.

  • Bachelor’s degree from a four year college or university required. Restaurant Manager: Supervises overall operation of a specific food service unit and/or stand. Directs activities of all staff within area of responsibility. Accountable for unit sales, direct operating expenses, food cost and quality, profitability, and guest satisfaction.Essential Duties Include:

  • Accountable for all facets of service, production, quality, and controls and ensures policies and procedures of the tour & food service departments are followed. Remains accountable for all sales and operating transactions in compliance with policies/procedures.

  • Prepare service and production staff schedules in accordance with forecasted business volume.

  • Plan for and ensure that all service personnel, facilities, and materials are in complete readiness for operation.

  • Alter production and employee needs with varying daily business volume and monitor all direct operating expenses for the area of responsibility.

  • Enforce established safety practices and ensure that all productivity and quality standards are maintained.

  • Maintain food and supplies par stocks; completes requisition forms accordingly and completes physical inventories.

  • Conduct meeting with staff at regular intervals, complete all required forms and paperwork.

  • One to three years practical experience and supervisory experience an asset.

  • Three to five years previous restaurant experience preferred.

  • Florida Food Manager Certificates required

  • Knowledge of financial and labor costs a must.

  • Must be able to run a shift without any supervision; or equivalent combination of education and experience. Food & Beverage Team Captain (Parks and CityWalk) : Responsible for revenue generation in restaurant locations, overseeing stock inventory, leading and training Team Members, ensuring guest service standards are met and operational readiness of indoor and open-air locations throughout Universal Orlando property and other company owned or leased venues.Essential Duties Include:

  • Assist management with the consistent execution of guest service and operational standards. Perform all operational duties related to the daily opening and closing of locations to include but not limited to inventory, issuing starting banks, providing change, performing audits and completing the end of day process.

  • Manage and maintain all facets of daily operation of the location. Assign tasks and monitor performance of Team Members to ensure policies and procedures of the department are followed. Ensure that Team Members are wardrobe compliant. Ensure established safety practices and quality standards are maintained. Responsible for maintaining and inspecting show quality standards as set by the company.

  • Train and coach Team Members, explain performance and behavioral expectations, provide feedback and recognition. Conduct shift meetings and provide daily sales goals in support of the revenue plan. Report behavior requiring discipline and documentation to the management team.

  • 1-3 Years: cash handling, foods service experience; or equivalent combination of education and experience; Leadership experience preferred. ADDITIONAL INFORMATION: Positions in Food & Beverage Management require:

  • Ability to stand for long periods of time

  • Ability to lift and or move between 25 and 50 pounds

  • Working outdoors in all weather conditions ( select positions )

  • Maintaining a clean work environment with use of cleaning chemicals

  • Working in extreme cold and extreme heat (non-weather)
